Paleo ‘Tortilla’ Chips

  • 2 cups Almond Flour
  • 2 egg whites
  • 1 tsp sea salt
  • 1/2 tsp each: cumin,  chili powder, cayenne, ground coriander, ground annato, ground dried orange peel
  • 1 tsp onion powder, garlic powder
  1. Preheat the oven to 325.
  2. Mix all the ingredients together to from a firm but supple paste. Roll out the mix between two pieces of parchment as thin as you keep even. THIN. As in really thin. Peel off the top parchment and gently cut.
  3. Bake for about 10 minutes. You’re looking for light golden brown, dark means nasty bitter, if some chips color faster than others, use a flexible spatula and take them out.
  4. Use for guacamole or whatever.

Yay, salsa ingestion vehicle! I wonder what these will taste like without the salt, though.

Made it 2 whole weekends without alcohol – hooray! So unfun, but I’m proud of myself. And, so far, no weight gain.

How do these taste? Tortilla chips are a weakness so any substitute would be helpful

They taste good. Not unbelievable, but very acceptable with good guac.

Dave and I made these last night. They are pretty tasty, although we would recommend rolling out the “dough” in two batches in order to get it really thin. Some of our “chips” turned out more like crackers.

Anyone have a recommendation for a food scale? I’m hoping to find one that will let me zero out a container’s weight before I put the food in. Thanks!

Is chickpeas paleo ? I am using hummus as a side or to dip my chicken sometimes…..its not a legume right ?

Made these last night, but couldn’t find ground annatto. But they are pretty tasty, I haven’t tried melting cheese on them yet, but will try that this afternoon.

We use the “Progressive Kitchen Food Scale”. It lets you zero out the plate first! it measures in ounces/lbs and grams/kg…
